This is one of at least five recipes I've tried with the Kodiak Power Cakes mix, and it sticks every time. It's not as versatile as all the other flours I've used are, so I'll probably return the box.
Adapted from Lemon Chia Seed Super Muffins
Ingredients
1 1/4 c. + 1 T. Kodiak Power Cakes baking mix
22 g Now Foods Unflavored whey powder
1/2 T. chia seeds
1 t. baking powder
2 T. lemon juice
1 t. powdered lemon peel
3/4 c. 2% milk
1/4 c. egg whites
2 T. 2% Greek yogurt
3/4 t. lemon extract
1/2 t. vanilla extract
4 T. honey
3/4 c. blueberries
Directions
Preheat oven to 350 degrees and coat a muffin pan with non stick spray.
In a large bowl, combine all ingredients. Mix until completely smooth. Divide and pour batter into prepared pan. Bake for 20-22 minutes until edges are slightly golden brown and tops bounce back to the touch
