Ingredients
4 slices lean, uncured bacon, trimmed of excess fat
1/4 sweet onion, finely diced
1 c. broccoli, finely diced
2 eggs
4 egg whites
2 T. whole milk
1/2 t. smoked paprika
1/4 t. chipotle powder
1/8 t. dried thyme, rubbed between your hands
1/2 oz. asiago cheese, shredded
Directions
Heat a skillet over medium-high heat and sauté bacon and vegetables. Whisk together eggs, egg whites, milk, and seasonings. Pour into skillet over sauteed vegetables and stir occasionally. Reduce heat and stir in cheese. Remove from heat and serve immediately.
