Ingredients
2 boneless, skinless chicken breasts
salt and pepper
8 c. of mixed baby salad greens
2 red, yellow, or orange bell peppers, diced
1/2 large sweet onion, finely diced
1/2 c. Sun-Dried Tomato Basil Vinaigrette
Directions
Pan-grill chicken breasts in salt and pepper. Place sliced, cooled chicken atop vegetable salad medley, and dress with the vinaigrette made from the linked recipe.
