Ingredients
2 eggs
4 egg whites
2 T. whole milk
1 oz. grated pepperjack
4 cherry tomatoes, diced
1 oz. Trader Joe's Hatch Valley Salsa
salt, pepper, and ghost chili flakes, to taste
1/2 T. sunflower seed oil
Directions
Heat an iron skillet over medium-high heat, and coat with oil. Beat eggs, egg whites, milk, and spices together, and pour into the pan. Cook, stirring gently and scraping the bottom, until eggs are mostly cooked. Reduce heat to low, add in tomatoes and continue to cook until eggs are set. Divide onto two plates and top each with half of the cheese and salsa. Serve and enjoy!
